Whether you think breakfast is the most important meal of the day or intermittent fast and skip breakfast, I think we can all agree breakfast food is delicious and should be consumed at all times of the day. The Kinda Healthy breakfast recipes in this guide range from low fat biscuits and gravy to protein waffles and homemade McGriddles. They all make pretty big batches or work great reheated for easy recipes like chicken sausage biscuits or healthy chorizo and egg tacos, making them great for meal prep.

Breakfast Potatoes & Peppers

If you like potatoes O’Brien, these will be your jam. You can prep this recipe in bulk using an air fryer or oven to roast everything in a simple garlic heavy seasoning. They’re great fresh and just as great reheated.

Low Carb Breakfast Skillet

This is an easy one-pan breakfast recipe with classic breakfast sausage seasoned ground chicken, keto potatoes (AKA radishes), eggs, and cheese. If you’re following a low carb protocol, feel free to load this skillet up with extra cheese. My low carb cheeseburger skillet, for example, calls for twice the amount of cheese.

Turkey Sausage Breakfast Skillet

This spin on the breakfast skillet uses the same breakfast sausage seasoning for ground turkey. Feel free to swap the potatoes out for more radishes like in the low carb breakfast skillet recipe above.

Homemade Chicken Chorizo

This is one of my favorite recipes ever. You get all the great flavor of chorizo with a fraction of the fat thanks to lean ground chicken. Whip some of this chorizo up in bulk for easy reheating and using for everything from tacos and quesadillas to dinner options like soup and chili.

3-Ingredient Protein Pancakes & Waffles

In 10 years around the fitness industry, I’ve tried my fair share of protein pancake recipes. My 3-ingredient recipe, while cheating, is the best I’ve tried and works great as both pancakes and waffles.

How is it cheating? Well, the recipe calls for pancake mix in addition to the protein powder. I’ve included four different options so you can get an idea of how the ratios of protein powder and milk slightly change with different mixes.

Homemade McGriddles

One of my favorite ways to use said 3-ingredient protein pancakes it to make copycat McGriddles. You can use bacon, ham, just egg, or chicken sausage patties (recipe below) with these sandwiches. And these are great to make in bulk for freezing.

Greek Yogurt Biscuits

Love buttermilk biscuits? Then you have to try this recipe. That’s it. That’s the blurb.

For the blueberry version you see in the featured photos, I added about 1/2 cup of fresh bloobs to the dough after mixing and going on the board to bring together.

Butterfinger Protein Oats

This is one of the most popular healthy breakfast recipes around these parts, and it’s really not that close. The biggest tip I can give here is to make the dry ingredient mix of protein powder, pudding mix, and powdered peanut butter in bulk so you can just throw it in with cooked oats in seconds.

Homemade Protein Granola

The granolas are some of my personal favorite breakfast meal prep recipes. They’re crunchy, flavorful, and go great with a yogurt parfait or even with just a little milk. Chilaquiles

Extra thin corn tortillas are a secret weapon ingredient around here. You can make all kinds of lower calorie tacos, tostadas, and you betcha, chilaquiles.

Sometimes you need a meaty, beany breakfast, and this chili is precisely that. This is a great one for cooler weather, and it makes a beaucoup so you can have chili for days. Pair it with some hash browns or crispy thin corn tortilla strips.

Any tips for making the protein pancakes less dry?

If you're using a whey-only protein powder, it's hard to do without adding some fat to the pancakes. Not every protein powder makes great protein pancakes, unfortunately. Aside from ingredients, be sure to mix the dry ingredients together first to avoid over mixing the batter. And make sure you're not overcooking them.
