Protein cookies are one of the many reasons this is the greatest time in history to be alive. They combine two amazing things—cookies and makin’ gains—and there’s little to dislike about them. Except for the fact that many protein cookies on the market are actually loaded with fat and calories.
If I wanted a cookie with 400 calories, I’d have 9 Oreos thank you very much.
These inside out chocolate chip protein cookies aim to fight back. You’ll find 8 grams of protein and only 95 calories in each cookie. I know what you’re thinking and yup, you can totes eat four or five of these protein cookies instead of one of those store-bought protein cookies. Here in the south, we’d give that a yee yee.
How to Make Protein Cookies
Like nearly every recipe on my blog, these protein cookies are simple and can be prepped in one bowl. Yay for less dish washing! Below I’ll briefly touch on a few ingredients and common questions surrounding them.
What is Swerve?
Swerve is a zero-calorie sugar substitute that is made from erythritol and oligosaccharides. I’ve traditionally used stevia in most of my recipes, but this stuff blows stevia out of the water in the flavor department. Not to mention, they make both a granular and powdered sugar replacement. For these protein cookies, I used the powdered (confectioners) Swerve.
If you don’t have an issue with artificial sweeteners, I would highly suggest picking some Swerve up. I got mine on Amazon here.
Pro tip: You can buy both versions, but I typically go with confectioners only. Unless you’re making large batch recipes, you can kill two birds with one stone and use Swerve for both baking and icings/frostings. And once you have Swerve in your possession, make my chocolate cake protein donut holes ASAP.
In the recipe notes, I’ve included replacement instructions and the macros for using real powdered sugar. Since we’re not using much, the differences are tiny.
Protein Powder
For these inside out protein cookies, I used PEScience Select Whey and Casein blend. Like I mention in my staple ingredients and substitution guide, the most important thing to keep in mind when using other protein powders, aside from the type of protein itself, is scoop size.
Match the protein powder amount in grams. And if you’re using a whey-only protein powder, you may need to add a bit more to match the consistency of a whey and casein blend.
If you’d like to learn more about the different types of whey protein and how to find the best value for protein, read this article.
Can I Substitute for Coconut Flour?
Unlike my coconut cheesecake protein cookie recipe, the coconut flour is overpowered by chocolate and doesn’t directly contribute to the flavor of these recipes. That said, this recipe and its macros will be difficult to replicate with other flours. Using my typical all purpose flour for coconut flour recommendations, you’d have to add around 200-300 calories in all purpose flour to make it work.
You might as well make real cookies at that point! Go with coconut flour or try some of my other recipes like white chocolate peanut butter protein cookies or banana nut breakfast cookies that don’t call for coconut flour.
All right, that’s all ya need to know about the ingredients for these inside out chocolate chip protein cookies. Any other modifications you can find in the recipe notes below. Enjoy!
Inside Out Chocolate Chip Protein Cookies
Low carb and low fat chocolate protein cookies with white chocolate chips.
Ingredients
- 1/4 C (28g) Coconut Flour
- 1 scoop (31g) PEScience Protein Powder, vanilla
- 3 Tbsp (15g) Unsweetened Dark Cocoa Powder
- 2 1/2 Tbsp Swerve Confectioners, or powdered sugar
- 1/2 tsp Baking Powder
- 1/4 tsp Kosher Salt, or 1/8 tsp table salt
- 3/4 C (170g) Fat Free Greek Yogurt, vanilla
- 3 Tbsp (42g) White Chocolate Chips
Instructions
- Preheat an oven to 350F and line a baking sheet with parchment paper.
- Mix the dry ingredients in a large bowl. Make sure no clumps remain from the coconut flour.
- Add the Greek yogurt to the dry ingredients and stir until a dough begins to form.
- Gradually add the chocolate chips in as you fold the dough. Once all the chocolate chips are added, use your hands to roll the dough into a large ball.
- Divide the dough into 6 pieces and flatten them into circles between your palms. (Cooking spray on the hands helps prevent sticking.)
- Bake for 14-16 minutes or until the cookies are baked through. They should still be soft but able to gently move. They'll be more firm after cooling so don't bake until they're completely firm.
Notes
- Each cookie has 3 Smart Points.
- You'll still need the cocoa powder for dough consistency even if you use chocolate protein powder.
- Nutrition info does not include carbs from zer0-calorie Swerve. If you're using real powdered sugar or want to count the carbs from Swerve, each cookie has 14 grams of carbs.

This recipe looks great - However, could you adjust the settings so it will print without all the pics? I do not want to waste 4 sheets of paper and ink printing pictures! If I want to print the recipe, I will have to copy/paste it into Word and who has time for that. This is pretty standard with internet recipes. Also a "Jump to Recipe" would be nice...

There's a jump to recipe at the top. Most recipe cards don't have the process photos. I think you found one of the outliers. Sorry!
