If you’re a fan of potatoes O’Brien or potatoes and bell peppers with your eggs and bacon, you’ll love this air fryer breakfast potatoes recipe. It yields a beaucoup of taters, making it great for feeding a crowd or breakfast meal prep.
And since they’re air fried potatoes, you’ll barely need any oil. So unlike original fried breakfast potatoes, each serving has just 2 grams of fat. That leaves you plenty of room to load up on bacon and eggs!
How to Make Breakfast Potatoes in an Air Fryer
This is a super simple recipe that takes about 10 minutes of prep. You’ll find a visual recipe tutorial below with some ingredient modification notes and tips. If you’re feeling confident and ready to get rolling, you can skip down to the full recipe card at the bottom of the post.
Quarter baby gold or Dutch yellow potatoes and largely dice a red and green bell pepper.
These are the same potatoes I used for my air fryer Greek potatoes and Mexican potatoes recipes. And like I mentioned in those, yellow fleshed potatoes will cook a bit differently than something like russet potatoes. If you wanted to use russet potatoes, you may need to slightly extend the cook time.
As for the peppers, feel free to mix up the type of peppers you used to add more spice to your breakfast potatoes. A jalapeño or serrano would be good. You could also add more veggies like the red onion in my air fryer Greek chicken and veggies or zucchini like my air fryer cajun chicken and vegetables.
Toss with olive oil, garlic powder, onion powder, black pepper, and salt.
Feel free to get creative with your breakfast potatoes seasoning. It’s hard to go wrong with little smoked paprika or dried chiles.
Though if you wanted to add lots of spices, you might save some of the seasoning for the last 10 minutes in the air fryer. Like I mentioned in my cajun Ninja Foodi sweet potato fries recipe, adding seasoning towards the end of frying can prevent the spices from burning during longer cook times and make your breakfast potatoes even crispier.
Air fry for 30-35 minutes at 400ºF, shaking a few times throughout.
I used a 6.5-quart Ninja Foodi to make these air fryer breakfast potatoes. I always like to mention that using a different type of air fryer may require slight modifications to cook time, especially if it’s a different size. Keep in mind, more surface area equals faster air frying.
Since this is a huge batch of breakfast potatoes, shaking a few times is necessary for even cooking. To make shaking a bit easier, you can always just transfer the potatoes back to the mixing bowl, give them a toss, and go back in the air fryer basket. This will also pick up any remaining oil or seasoning left behind in the mixing bowl.
The good news is that these air fried potatoes O’Brien are basically impossible to mess up. Once the potatoes are fork tender, you’re good to go. You can air fry them a few extra minutes to get them as crisp as you’d like.
Serving Your Air Fryer Breakfast Potatoes
I’ve included notes in the recipe card for air frying eggs on top of the potatoes. You could also pan fry some eggs and bacon while they’re in the air fryer or make chipotle chicken and scrambled eggs like in my meal prep breakfast bowls.
Or if you wanted to go true country style, you could make my homemade chicken breakfast sausage patties or some of my chicken sausage gravy to serve with your taters.

Air Fryer Breakfast Potatoes
A big batch of crispy golden brown potatoes with charred red and green bell pepper.
Ingredients
- 1 1/2 lbs Baby Gold or Dutch Yellow Potatoes, quartered
- 1 large Red Bell Pepper, largely diced
- 1 large Green Bell Pepper, largely diced
- 2 Tbsp (32g) Olive Oil
- 2 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Black Pepper
- 1/2 tsp Kosher Salt
Instructions
- Toss the quartered potatoes and diced peppers with the olive oil in a large bowl before adding the garlic and onion powder, salt, and pepper. Transfer the potatoes to an air fryer basket.
- Air fry at 400ºF for 30-35 minutes, shaking 2-3 times during cooking, until the potatoes are crispy golden brown and the peppers have some slight charring around the edges.
Notes
For a complete air fryer breakfast, place half the recipe (330g) in the basket and crack 3 eggs on top. Air fry for 8-10 minutes at 350ºF or until the eggs are cooked how you like. Be sure to push the potatoes close together to avoid the egg whites leaking through. You can also top the potatoes with a bit of shredded cheese before adding the eggs to air fry.
If you wanted to make oven roasted breakfast potatoes, you could try roasting on a large baking sheet at 450ºF for 25-35 minutes. Flip/stir halfway through for best results.

Can I add diced onions too? P.S. I just started cooking breakfast potatoes in my air fryer. Mine take about 20 minutes at 400F and I preheat it for about 3-5 minutes and spray with cooking spray. I season with black pepper, cumin!, seasoning salt, paprika and/or Hatch chile powder, onion salt, garlic powder/salt and maybe some oregano. I use a little high heat avocado oil instead of olive oil but either works. Cheers!

Sounds like a solid combo! I think onions would be a nice addition. Just dice them about the same size as the peppers.

Oh yeah, they're great reheated. I usually just give them a few minutes in the air fryer (or 30-60 seconds in the microwave) when reheating.

Great recipe and appreciate your thorough explanations and pictures! Made these potatoes in my Ninja Foodi on Air Crisp this morning for my husband’s breakfast. I included ~1/3 of one medium size white onion along with 1/2 each of red and green bell peppers. My husband told he liked them made this way because he realized it was a healthier option than deep frying in oil. Honestly, I don’t know how to cook them like that; I avoid any cooking where I am going to be subjected to hot oil spatters! Using the air fryer is so easy and easy cleanup.

One of my family's favorite restaurants is Lupe Tortilla (TX gal here). They have great breakfast. My husband and I took one bite of Mason's air fryer breakfast potatoes and we felt like we're at Lupe. I made them a second time and paired them with refried beans and migas eggs.
