How to Make Breakfast Sausage Seasoning

Ingredients you’ll need: 

  • brown sugar
  • black pepper
  • smoked paprika
  • red pepper flakes
  • kosher salt
  • rubbed sage
  • allspice

You’ll notice in the photo above that I use Swerve Brown, which is a zero calorie sugar substitute that tastes and caramelizes just like sugar. This ingredient is great, and I’ve used it in other savory recipes like Nashville Hot air fryer chicken nuggets and my Ninja Foodi bbq pulled pork. All that said, plain ol’ brown sugar works perfectly fine.

As far as the other ingredients go, you can probably take a little artistic liberty with your own breakfast sausage seasoning. If you like extra spicy sausage, you could add more red pepper flakes or a couple pinches of cayenne pepper. Or if you’re a salt fanatic, you may decide to add a bit more to your mix.

Something else to keep in mind is that you can always add ingredients as you use this seasoning. The recipe makes 6 servings. If you try one and decide you wanted a bit more salt, you could just add it as you make your breakfast sausage next go around. Or you could add it straight to the mix and adjust in your next batch. 

Using Your Homemade Breakfast Sausage Seasoning

Like I mentioned in the intro, my favorite use for this seasoning is making chicken sausage with ground chicken. For the sausage patties, I massage the seasoning into the ground chicken and make 10 patties out of a pound of ground chicken. Pan fry in a tablespoon of olive oil and you’ve got perfect breakfast sausage that’s low fat and low calorie. This method would work for any ground meat. 

An even easier cooking method is to use the seasoning to make breakfast sausage crumbles. For this method, you’ll basically use your breakfast sausage seasoning like taco seasoning. Cook ground chicken, turkey, pork, or your choice of meat in a skillet and add the seasoning towards the end of cooking. That’s it. Add a little butter, flour, milk, and white pepper and you’ve got sausage gravy on your hands!

Ingredients

  • 3/4 cup 144g Brown Sugar*
  • 3 Tablespoons 21g Black Pepper
  • 2 Tablespoons 14g Smoked Paprika
  • 1-2 Tablespoon 5-10g Crushed Red Pepper Flakes, to spice preference
  • 1 Tablespoon 15g Coarse Kosher Salt
  • 1 Tablespoon 3g Rubbed Sage
  • 1 teaspoon 3g Allspice

Instructions 

  • Add all the ingredients to a large bowl and use a fork to mix until no lumps of brown sugar remain. Store in an airtight container.
  • To use, mix 3 1/2 Tablespoons (35g) with every one pound of ground chicken, turkey, or your choice of meat.

*I use Swerve Brown, a zero-calorie sugar substitute. The nutrition facts are with Swerve. If you use real brown sugar, each 35-gram serving has 123 calories, 0.6g of protein, 31g of carbs, and 0.3g of fat.

    We really loved this breakfast sausage seasoning recipe. I like to put chicken breasts cut up into chunks into the food processor for a cheaper ground chicken and use this seasoning to make breakfast sausage crumbles. Add to eggs and veggies for a quick meal prep breakfast.

    I love the chicken sausage and gravy. Having this seasoning mixed up in advance means I can get to breakfast even faster. I prefer to leave out the sweetener but overall the flavor is popping.     We buy pork tenderloin from Costco and cut ourselves to make it cheaper. Used about 3lbs worth and doubled this recipe. Used the meat grinder on my kitchen aid and makes for a very flavorfull and lean breakfast sauce to make my family breakfast burritos with

    Very very good and we love that it’s keto! We cut the recipe in half and used it with 2 pounds of home raised ground pork. It was a tad on the spicy side for one of our family members and we used 3/4 tablespoon of red pepper flakes. The rest of us love it with that amount of spice. So if you don’t like spicy go easy on the red pepper flakes. We are making 10 more pounds with this recipe tonight, vacuum sealing it, and freezing it for use at a later date.

    Is it 1tsp or 1T of sage? The grams are throwing me off because it looks like it should be 1tsp.

      That’s 1 tablespoon. The salt is much heavier by volume than the sage, for comparison.

    I made this up yesterday and used it in ground pork, we enjoyed it but it was a little to sweet for my taste. It was still tasty and my husband enjoyed it, I just prefer something with more of a kick.
