This is no ordinary protein French toast recipe. Instead of traditional sliced bread, it calls for homemade protein banana bread. Each crispy golden brown slice has 13 grams of protein with only 15 grams of carbs and 8 grams of fat. That leaves you plenty of room for toppings like freshly sliced banana, a peanut butter drizzle, and maybe even a little dusting of powdered sugar.
How to Make Protein French Toast with Banana Bread

The Bread
The key ingredient will be the banana bread slices, which is one of my favorite protein powder baking recipes on my blog. If you’re ready for protein French toast right this instant, however, any thick sliced bread will get the job done. You can even find lower carb, high protein bread options in stores like Sola and Dave’s Killer Bread, among others.
If you like the idea of protein French toast with this style of bread but aren’t a fan of banana, you could use something like protein zucchini bread or protein pumpkin bread instead.
The Batter
For the French toast batter, I went with a classic eggs, milk, cinnamon sugar, and vanilla extract situation. It only adds about 2 grams of fat and 35 calories per slice, so I didn’t think using all egg whites like other protein French toast recipes call for was necessary.
All that said, if you have another go-to protein French toast recipe, feel free to dip your banana bread in that if you’d like. I’ve also seen other recipes use things like sugar free pancake syrup or honey instead of sugar in the batter. That’s sort of appealing to me. Let me know if you experiment!
Protein French Toast Toppings
The banana bread I used to make this protein French toast has a peanut butter swirl on top and peanut butter in the batter itself. So a peanut butter topping is a no-brainer. To keep the fat on the lower end, you could use a powdered peanut butter drizzle. And Swerve makes a sugar-free powdered sugar that works great for a light dusting.
Really anything that would go with peanut butter and banana is fair game here.
All that’s missing is a side of center cut bacon or chicken breakfast sausage.

Banana Bread Protein French Toast
A great way to repurpose leftover protein banana bread or your favorite high protein bread for breakfast or brunch.
Ingredients
- 6 slices Protein Banana Bread (or your choice of high protein bread)
- 2 large Eggs
- 1/3 cup (80g) Milk
- 1 teaspoon (4g) Granulated Sugar
- 1/2 teaspoon Vanilla Extract
- 1/2 teaspoon Ground Cinnamon
- Pinch of Kosher Salt
Instructions
- Whisk together the eggs, milk, vanilla extract, cinnamon, sugar, and salt. Set aside.
- Heat a large skillet or griddle over medium-low heat.
- Once hot, add cooking spray. Dip the sliced protein bread in the egg mixture and place in the skillet.
- Cook for about 2 minutes or until golden brown before flipping and cooking an additional 2 minutes. For a larger batch, you can keep finished slices in an oven set to a low heat (~200ºF).
- Serve with a dusting of powdered sugar, fresh banana slices, peanut butter, and syrup.
Notes
The protein banana bread I used has 150 calories, 10g protein, 14g carbs, and 6g fat per slice.

I used 2% Fairlife milk, but almond milk or any milk should work fine.
