When you think of a low calorie dessert, Reese’s Puffs probably don’t come to mind. So you may be surprised to see the delicious chocolate peanut butter cereal packed into mini muffins with only 33 calories a pop.

Each popper has 33 calories, 2.9 grams of protein, 3.6 grams of carbs, and 0.8 grams of fat. And because you won’t wanna stop at one, four poppers will net you 132 calories, 11.6 grams of protein, 14.4 grams of carbs, and 3.2 grams of fat.

How to Turn Cereal into a Low Calorie Dessert

Other than Reese’s Puffs and a bit of protein powder, this recipe is pretty straightforward.

To touch on a few potential modification questions:

  • If you don’t have coconut flour on hand, you could add another 3/4 C (29g) Reese’s Puffs or more PB2 Powdered Peanut Butter to compensate.
  • Want extra gooey poppers? Adding 1-2 extra tablespoons of chocolate chips wouldn’t add that many calories per popper.
  • And if you’d like fluffier protein poppers, you can swap the egg whites for a whole egg.

As for the baking process, you can use any muffin tin you’d like but because people tend to ask, this is the one I use.

You can use any protein you’d like, but I usually go with PEScience Select Whey and CaseinDymatize 100% Whey, or Optimum Nutrition Gold Standard Whey. The macros in this recipe are with Gold Standard Whey.

Reese's Puffs Protein Poppers

Ingredients

  • 1 1/2 C 58g Reese's Puffs Cereal, crushed or blended finely
  • 2 Tbsp 12g PB2 Powdered Peanut Butter
  • 1 scoop, 30-32g Protein Powder, vanilla
  • 2 Tbsp 14g Coconut Flour
  • 2 Tbsp 10g Unsweetened Dark Cocoa Powder
  • 1 tsp Baking Powder
  • 1 C 227g Fat-Free Greek Yogurt, vanilla
  • 3/8 C 92g Liquid Egg Whites, or 2 whole egg whites
  • 1/4 C 60mL Walden Farms Pancake Syrup, or your choice of sticky sweetener
  • 2 Tbsp 28g Dark Chocolate Chips

Instructions 

  • Preheat oven to 350 degrees F and spray a 24-muffin tin with nonstick cooking spray. 
  • Crush Reese's Puffs cereal in a Ziploc bag or food processor before mixing with remaining dry ingredients. (Save chocolate chips for last.)
  • Gradually stir in Greek yogurt, egg whites, and the sticky sweetener. Stir until smooth.
  • Fold chocolate chips into the mixture. 
  • Using a spoon, fill the muffin tin with the mixture. Avoid overfilling each slot.
  • Bake for 18-20 minutes or until a center popper can pass the toothpick test.

  • Per popper (recipe makes 24): 33 Calories | 2.9P | 3.6C | .8F
  • Per 4 poppers (because once you pop you can't stop): 132 Calories | 11.6P | 14.4C | 3.2F

    I don’t have any of the Waldens pancake syrup but I do have a lite maple syrup or honey. Which would you recommend using? Do you think you would taste the maple flavor too much if I use the pancake syrup?
