Reese's Puffs Protein Poppers

Ingredients

  • 1 1/2 C 58g Reese's Puffs Cereal, crushed or blended finely
  • 2 Tbsp 12g PB2 Powdered Peanut Butter
  • 1 scoop 30-32g Protein Powder, vanilla
  • 2 Tbsp 14g Coconut Flour
  • 2 Tbsp 10g Unsweetened Dark Cocoa Powder
  • 1 tsp Baking Powder
  • 1 C 227g Fat-Free Greek Yogurt, vanilla
  • 3/8 C 92g Liquid Egg Whites, or 2 whole egg whites
  • 1/4 C 60mL Walden Farms Pancake Syrup, or your choice of sticky sweetener
  • 2 Tbsp 28g Dark Chocolate Chips

Instructions

  • Preheat oven to 350 degrees F and spray a 24-muffin tin with nonstick cooking spray. 
  • Crush Reese's Puffs cereal in a Ziploc bag or food processor before mixing with remaining dry ingredients. (Save chocolate chips for last.)
  • Gradually stir in Greek yogurt, egg whites, and the sticky sweetener. Stir until smooth.
  • Fold chocolate chips into the mixture. 
  • Using a spoon, fill the muffin tin with the mixture. Avoid overfilling each slot.
  • Bake for 18-20 minutes or until a center popper can pass the toothpick test.
