Are you seeing cottage cheese toast all over social media being heralded as the superstar high protein breakfast? I definitely am. With so many different variations out there, I wanted to throw my hat in the ring with this spin on a “Fat Elvis” sandwich.
My version has crispy bacon, caramelized bananas, peanut butter, honey, and cottage cheese on sourdough toast. That’s enough flavor to appease even the biggest cottage cheese detractor.
And thanks to center cut bacon and powdered peanut butter, it’s an extra high protein cottage cheese breakfast. Each slice of toast has 20 grams of protein with only 4 grams of fat and 290 calories.

How to Make Cottage Cheese Toast Fat Elvis Style
The recipe starts by cooking diced center cut bacon in a nonstick pan. I like using nonstick here since it makes caramelizing the bananas without much oil a lot easier.
I mention in the recipe card at the bottom of the post that you can omit the bacon (or swap it for precooked bacon) and use a bit of oil or cooking spray for the bananas if you prefer. You can also cook whole slices and chop or crumble it before sprinkling over the toast at the end.

Cooking the bacon should give you just the right amount of time to start slicing a few bananas, making your toast, and mixing powdered peanut butter with water.
If you’re unfamiliar with powdered peanut butter, it’s a low fat peanut butter alternative that can be reconstituted with water. Creamy peanut butter flavor without all the fat. You can, of course, use regular peanut butter. Like I mentioned in the intro, each slice of this cottage cheese toast has just 4 grams of fat, leaving you a few calories for the real deal.

After you have crispy bacon, transfer it out of the pan and put the sliced bananas in its place. You want an even layer so each piece can caramelize in the pan. It won’t take more than a minute or two for the bananas to brown. So keep an eye on them and flip with a small spatula as they’re ready.
If you’re using something other than a nonstick pan, you will need a bit more oil to prevent sticking. You can also use an air fryer or oven to make roasted banana slices.

It’s also worth mentioning, the ripeness of bananas may affect how quickly they caramelize. I would lean toward less ripe bananas than overripe bananas for something like this.
Once the bananas are ready, it’s time to assemble. The reconstituted powdered peanut butter goes on the toast first, followed by cottage cheese and the bananas. Then a drizzle of honey and the crispy bacon goes on top. A final touch of flaky salt is the cherry on top.

If you’re a big peanut butter fan, you might consider doubling the amount of powdered peanut butter and water mixture to drizzle extra over the top along with the honey.
Final Thoughts

Peanut Butter Banana Cottage Cheese Toast
Fat Elvis style toast with cottage cheese, caramelized bananas, peanut butter, bacon, and honey.
Ingredients
- 4 slices Center Cut Bacon, diced
- 3 large (350g peeled) Bananas, thinly sliced
- 12 oz Low Fat Cottage Cheese
- 3 Tablespoons Powdered Peanut Butter
- 2 Tablespoons Water
- 4 teaspoons Honey
- 4 slices Sourdough Bread (or your choice of bread)
Instructions
- Add the bacon to a nonstick skillet over medium heat. Cook until crispy, about 5-6 minutes.
- While the bacon cooks, toast the bread and slice the bananas. Mix the powdered peanut butter and water together in a small bowl.
- Once the bacon is crispy, transfer to a paper towel and drain all but about 1 teaspoon of bacon grease.
- Reduce the heat to medium-low and carefully place the banana slices in the pan in an even layer. Cook for 1-2 minutes until the banana begins to caramelize on one side before flipping and cooking an additional 1-2 minutes. Remove the pan from the heat and set aside.
- Top each slice of toast with a little more than 1 tablespoon of the peanut butter mixture, 3 ounces of cottage cheese, and 1/4th of the caramelized banana slices. Drizzle a teaspoon of honey over each slice and sprinkle the crispy bacon over the top.
Notes
If you want to skip the bacon, you can use a small amount of olive oil or avocado oil cooking spray to brown the bananas. You can also crumble precooked bacon over the top for a time saving solution.
