These copycat homemade McGriddles combine 4-ingredient protein pancake buns with folded eggs and your choice of healthier fixin’s like chicken breakfast sausage. It’s a simple recipe with a 25-minute prep time and just 5 ingredients, and it’s highly customizable. I’ll walk you through the recipe below and cover modification questions as we go.

How to Make High Protein McGriddles Buns
For the McGriddles buns, I used my 3-ingredient protein powder pancakes recipe with two minor tweaks. The first being the addition of maple extract. If you’ve had the original McGriddle you’re familiar with the syrup flavor in the buns. The maple extract mimics this.
The other tweak is the size of the pancakes. Instead of using 1/4 cup of batter to make a pancake, the recipe calls for using 2 tablespoons. This makes perfectly sized McGriddles buns. And if you don’t have a 2 tablespoon measuring cup, just fill a 1/4 cup halfway like I did!

My 3-ingredient protein pancakes recipe calls for protein powder, milk, and pancake mix. These homemade McGriddles call for the Bisquick version, but you can use other pancake mixes. Check out the graphic below for other mixes I’ve tested and the amounts to use for each.

What if I don’t have protein powder?
Just use your favorite pancake mix. Or you could use the pancake recipe from dwardcooks’ McGriddles Makeover recipe.
Can I use another protein powder?
The short answer is yes, but you may need to make some slight modifications. Check out my original 3-ingredient protein pancakes post. I gave some tips for using whey-only and other protein powders there.
How to Make Folded Eggs
No special tools required—just a nonstick skillet and rubber spatula. Here’s how to do it:
- Whisk an egg in a small bowl while you heat a nonstick skillet over medium-low heat with cooking spray.
- Add the egg to the skillet and swirl to spread the egg across the entire pan.
- Once the edges are cooked (10-15 seconds), use a rubber spatula to fold one side of the circle into the center. Then fold the other side into the center, creating a rectangle in the center of the pan.
- Fold one end of the rectangle into the center, and the other end over that. You’re done!

Healthy Homemade McDonald’s McGriddles
Ingredients
- 1 C 120g Bisquick or Pancake Mix*
- 1 scoop, 31g Vanilla PEScience Select Protein Powder
- 3/4 C 180g Skim Milk (or your choice of milk)
- 1 tsp Maple Extract, optional
- 4 large Eggs, whisked
Instructions
- Mix the pancake mix and protein powder together before adding the milk and maple extract. Stir until no dry ingredients remain.
- Heat a large skillet or griddle over medium heat with cooking spray. Once hot, add 2 Tbsp of the pancake batter in 8 small circles. You may have to cook in two batches. Cook until golden brown on the bottom, flip, and finish cooking for another 60-90 seconds.
- For the eggs, whisk an egg together in a small bowl. Heat a pan over medium-low heat with cooking spray. Add the egg and swirl the pan to spread the egg across the whole pan. Once the edges are cooked (10-15 seconds), use a rubber spatula to fold one half into the center. Fold the other half over the top, creating a rectangle in the center of the pan. Fold one end of the rectangle into the center, followed by the other, creating a square. Repeat for all 4 eggs. You can cook 2 eggs at once and cut in half to save time.
- Assemble and enjoy!

Can I freeze these
They should freeze well, but I’d let them thaw overnight before reheating if possible.
I love making Mason’s recipes. This is by far one of my favorite quick breakfast options. We made up the sausage and pancakes ahead of time, stored them in the fridge, and would cook up the eggs each morning during the week. A great way for a quick handheld breakfast that is better for you than the fast food version.
Do not skip out on the maple extract. This is not optional if you want it to really embrace the McGriddle deliciousness. I have even tried doing a maple syrup glaze on the outside and nothing beats the extract.

Can I use this same recipe to make waffles?
You can. We do it all the time!
These are perfect for meal prep. I freeze them individually wrapped. I put one in the fridge the night before. Then I heat it in the microwave for 30-45 seconds depending on how thawed it is the next morning.
I make these on the regular for my breakfast meal prep! So easy, delicious, healthier, and money saving compared to going to McDonalds. Love them so much! Even my boyfriend requests me to make some for him.
My partner LOVES a McGriddle. Subbing this was super easy and tasted so much better. We used Kodiak pancakes for our protein pancake mix and put in a few drops of maple syrup since we don’t have the extract. Worked great! These turned out great to prep for camping. We froze them in tin foil then would pop them in the fire to reheat while we took down camp. Perfect way to get some protein while camping! Thanks for the recipe!
These were on point for McGriddles. I added a little maple syrup ( or whichever syrup you have on hand) to the pancake batter just before putting them on the griddle and it made for a great addition
Haven’t made these yet, but I plan on it. I looked at the calories on McDonald’s website, OUCH! I think homemade is very doable! Saving now.
