These copycat homemade McGriddles combine 4-ingredient protein pancake buns with folded eggs and your choice of healthier fixin’s like chicken breakfast sausage. It’s a simple recipe with a 25-minute prep time and just 5 ingredients, and it’s highly customizable. I’ll walk you through the recipe below and cover modification questions as we go.

How to Make High Protein McGriddles Buns

For the McGriddles buns, I used my 3-ingredient protein powder pancakes recipe with two minor tweaks. The first being the addition of maple extract. If you’ve had the original McGriddle you’re familiar with the syrup flavor in the buns. The maple extract mimics this.

The other tweak is the size of the pancakes. Instead of using 1/4 cup of batter to make a pancake, the recipe calls for using 2 tablespoons. This makes perfectly sized McGriddles buns. And if you don’t have a 2 tablespoon measuring cup, just fill a 1/4 cup halfway like I did! 

My 3-ingredient protein pancakes recipe calls for protein powder, milk, and pancake mix. These homemade McGriddles call for the Bisquick version, but you can use other pancake mixes. Check out the graphic below for other mixes I’ve tested and the amounts to use for each.

What if I don’t have protein powder? 

Just use your favorite pancake mix. Or you could use the pancake recipe from dwardcooks’ McGriddles Makeover recipe.

Can I use another protein powder?

The short answer is yes, but you may need to make some slight modifications. Check out my original 3-ingredient protein pancakes post. I gave some tips for using whey-only and other protein powders there.

How to Make Folded Eggs

No special tools required—just a nonstick skillet and rubber spatula. Here’s how to do it:

  1. Whisk an egg in a small bowl while you heat a nonstick skillet over medium-low heat with cooking spray.
  2. Add the egg to the skillet and swirl to spread the egg across the entire pan.
  3. Once the edges are cooked (10-15 seconds), use a rubber spatula to fold one side of the circle into the center. Then fold the other side into the center, creating a rectangle in the center of the pan.
  4. Fold one end of the rectangle into the center, and the other end over that. You’re done!

Healthy Homemade McDonald’s McGriddles

Ingredients

  • 1 C 120g Bisquick or Pancake Mix*
  • 1 scoop, 31g Vanilla PEScience Select Protein Powder
  • 3/4 C 180g Skim Milk (or your choice of milk)
  • 1 tsp Maple Extract, optional
  • 4 large Eggs, whisked

Instructions 

  • Mix the pancake mix and protein powder together before adding the milk and maple extract. Stir until no dry ingredients remain.
  • Heat a large skillet or griddle over medium heat with cooking spray. Once hot, add 2 Tbsp of the pancake batter in 8 small circles. You may have to cook in two batches. Cook until golden brown on the bottom, flip, and finish cooking for another 60-90 seconds.
  • For the eggs, whisk an egg together in a small bowl. Heat a pan over medium-low heat with cooking spray. Add the egg and swirl the pan to spread the egg across the whole pan. Once the edges are cooked (10-15 seconds), use a rubber spatula to fold one half into the center. Fold the other half over the top, creating a rectangle in the center of the pan. Fold one end of the rectangle into the center, followed by the other, creating a square. Repeat for all 4 eggs. You can cook 2 eggs at once and cut in half to save time.
  • Assemble and enjoy!

    This was super easy to make! I used 1/2 a scoop of vanilla casein and 1/2 a scoop of peanut butter whey, and I couldn’t find maple extract, but the consistency was great and they tasted awesome. I may try to make it with egg whites next time. The infographic for the different combos of mix/liquid/protein was super helpful!

    My husband and I have been using Masons recipes forever. When it comes to a quick meal prep, these sandwiches were the bomb. Instead of the pancakes, I made waffles (especially when using the carbquick). Made for a high volume and massive sand which!

    These are fantastic for meal prep! The maple extract provides the perfect amount of sweetness without being syrupy. The only minor complaint I have is that the batter became almost like a frosting like texture and I kept having to add milk. I’m not sure if it sat too long, or if I over-mixed, but I had to scoop them out of the measuring cup and spread them out manually. Definitely not pourable. However, it did not affect the taste, and they turned out great! Perfect with Mason’s chicken sausage!

    I made these and my husband loved them! I usually omit protein powder because he hates it (but this time I didn’t tell him) and he didn’t even notice!! Next time I’m adding the maple extract and will drizzle maple syrup for my husband since he likes the sweet taste! Even thinking about these makes me want to make them!!

    These are the bomb dot com! I am not about to attempt a folded egg anytime soon so I do an over easy egg. I also use Krustez pancake mix which I find superior.

    Has anyone ever cooked these and then froze them to heat up later? How did you like it? Mason, would these do okay with that?

      I’ve seen others freeze these. I think they’re best if you let them thaw overnight before reheating. If you’re in a hurry, you can wrap in a paper towel and heat for around 60-90 seconds at 50% power before going full power for 30-60 seconds. Your filling choice may affect the reheat time and will probably take a little tinkering. Good luck!

    These have become a staple in our house. We’ve tried them with bacon added but actually prefer them without. I always use water instead of milk when making Kodiak Cakes normally, and it works perfectly here as well. Fantastic recipe!

    Mason absolutely killed it on these!!! The McGriddle sandwich is my fiancé and I’s go to breakfast sandwich when we’re in a hurry or just want to splurge on something fast-food. These however, taste just as good (without the taste of grease) & reduce the guilt completely. I just cook a round egg in my pan instead bc I sub for a round egg at Mcdonald’s too. IF you’re hesitant bc you’re scared they will not be as good as Micky D’s.. Make these, RUN, do not walk!!
