Whether you’re completely new to the air fryer or an air frying whiz, I’m confident you’ll appreciate the simplicity of this loaded air fried chicken and potatoes recipe. With four ingredients (not counting spices) and about twenty minutes, you’ll have a high protein dinner for two.

If you split the recipe right down the middle, each serving touts a heart 37 grams of protein with just 21 grams of carbs and 11 grams of fat. That’s a total of 330 calories per serving.

Crispy potatoes and tender chicken smothered in bacon and cheddar cheese for 330 calories? I’ll take that every day of the week, please.

Ingredients for Loaded Air Fried Chicken and Potatoes

Here are the four primary ingredients you’ll need:

  • eight ounces of boneless skinless chicken breast or tenderloins
  • a can of whole new potatoes (or diced like the ones in my hamburger potato soup)
  • precooked bacon
  • reduced fat shredded cheddar

Easy enough, eh?

If you wanted to use fresh potatoes, I would peel them, poke holes in them with a fork, and microwave for 3-4 minutes. That should soften them enough to be comparable to the canned new potatoes.

You could also quarter up some baby gold potatoes and air fry them on their own for 10-12 minutes before adding the chicken. Check out my air fryer Greek chicken and potatoes for an example of this.

Seasoning Your Air Fried Chicken and Potatoes

I’m a bit of a spice lover, but you could simplify the spices even further:

  • olive oil
  • Lawry’s seasoned salt (could stop here)
  • black pepper and paprika

If you have a premixed blend of chicken seasoning, you could use that in similar proportions to season the chicken and potatoes. Don’t think you have to follow my recipes to a T.

Can I use the oven instead of an air fryer? 

While it’s possible to use the oven for just about any air fryer recipe, some recipes don’t work that well. Good news, though. This one should work fine in the oven. If you wanted to get a crispier potato in the short time frame, try using a wire rack instead of placing them directly on a baking sheet.

As for cook time, I’ve found that my air fryer an oven times are usually very close together. The popcorn chicken, for example, took maybe 2-3 minutes longer in the oven than the air fryer. With this recipe, you might try 400 for 8-10 minutes and extend as needed to fully cook the chicken.

I use a 5.8qt Digital XL Air Fryer with a barrel pan. You don’t have to use the pan, but you could replicate it with some aluminum foil if you’d like.

Loaded Air Fried Chicken and Potatoes

A simple air fried chicken and potatoes recipe that uses canned potatoes and is loaded with shredded cheddar and bacon.

Ingredients

  • 8 oz Boneless Skinless Chicken Breast, cubed
  • 15 oz can New Potatoes, drained
  • 1 tsp 5g Olive Oil
  • 1 tsp Lawry's Seasoned Salt, or your choice of seasoning blend
  • 1/8 tsp Black Pepper, optional
  • 1/4 tsp Paprika, optional
  • 3/8 C 42g Reduced Fat Shredded Cheddar
  • 4 slices Precooked Bacon, cut into thin strips

Instructions 

  • Cut the chicken into bite size pieces and add to a large bowl.
  • Open and drain the can of potatoes. Use a knife to cut the potatoes into small cubes before adding to the chicken. (You can also use sliced new potatoes to skip this step.)
  • Add the olive oil and spices to the bowl and stir to fully coat the chicken and potatoes. 
  • Add the chicken and potatoes to the air fryer basket in an even layer. 
  • Cook for 10 minutes at 400 degrees or until the chicken is fully cooked. 
  • Add the shredded cheese and bacon strips on top of the cooked chicken and potatoes and cook for an additional 3-5 minutes or until the cheese melts and bacon is crispy. (You can transfer the chicken and potatoes to a barrel pan, air fryer safe dish, or line your basket with aluminum foil to keep everything together.)
  • Top with plain fat free Greek yogurt or light sour cream, jalapeño peppers, green onion, or other toppings, if desired.

  • One serving = half the recipe.

    I just purchased an air fryer and Mason’s recipes have been a lifesaver! This was the very first recipe I tried in it, and it was a blinding success! I actually roasted new potatoes from scratch for 10 mins, then added the marinaded chicken and after another 10 mins modified with a lite 3 cheese blend – there is something about having that stringy melted mozzarella with every bite that makes it feel way more naughty than it is. Whack some hot sauce on there and it’s heaven on a plate….and it is extremely macro friendly to boot! Super easy, and will be a staple for me.

    This was extremely good! WW just started their “new” program and I ended up with 11 points for this as opposed to 7 on the Green program, but it was worth every single point.     Needed a new meal prep recipe and this was perfect! I do not have an air fryer so I had to change it up a bit. In a hot cast iron skillet I put sliced potatoes in it to give them a nice crust then finished them off on a separate tray in a 375 oven. In the same cast skillet cooked the chopped chicken and bacon. When the bacon was done I removed it, added chopped onions and mushroom to the skillet. Once everything was done, added everything to the cast iron then put them in separate containers. I added the cheese when I warmed up a meal. It is definitely a new favorite!!
