Trader Joe's Chicken Stir Fry

A simple chicken stir fry using Trader Joe's cruciferous crunch, just chicken, and Thai sweet ginger sauce.

Ingredients

  • 1/2 package 8 oz Trader Joe's Just Chicken, roughly chopped
  • 1/2 cup 120g Trader Joe's Thai Sweet Ginger Sauce
  • 1 Tablespoon Olive Oil
  • 1/2 bag 5 oz Trader Joe's Cruciferous Crunch
  • 3 Green Onions thinly sliced, white and green parts separated

For Serving

  • Frozen Rice or Riced Cauliflower
  • Toasted Sesame Seeds
  • Crunchy Chili Onion Sauce

Instructions

  • Mix the chopped chicken with the sweet ginger sauce. Set aside.
  • Add the olive oil to a nonstick pan over medium heat. Once hot, add the white parts of the green onion and the cruciferous crunch. Stir to coat in the oil and cook for 4-5 minutes until the veggies soften and begin to slightly char in spots.
  • Transfer the veggies to a bowl before adding the sauced chicken to the pan. Spread the chicken in an even layer and cook for 2-3 minutes until the sauce begins to caramelize on the bottom and the chicken is heated through.
  • Add the veggies to the pan and toss everything together. Garnish with the remaining sliced green onion and serve over rice.

Notes

You can double the recipe to use the full containers of the cruciferous crunch and chicken. I used the other halves to make pesto chicken salad focaccia sandwiches.

I like mixing a bag of frozen riced cauliflower with frozen jasmine rice to bulk up the amount of rice in meals.
