Microwavable S'mores Protein Blondie

A quick and easy protein blondie that's ready in under 5 minutes.

Ingredients

  • 1 scoop 32g Protein Powder, vanilla
  • 2 Tbsp 13g Graham Cracker Crumbs
  • 3/8 C 90g Unsweetened Apple Sauce, or 180g and omit pumpkin
  • 3/8 C 90g Canned Pumpkin, or 180g and omit apple sauce
  • 2 Tbsp 5g Marshmallow Bits
  • 1 Tbsp 14g Chocolate Chips
  • 1 tsp Swerve or 0-Calorie Sweetener optional

Instructions

  • Mix ingredients in a bowl and microwave for 90-120 seconds. 
  • Depending on the size of your bowl, you may have to finish the last 30-60 seconds in 10-15 second intervals to avoid overflow. (You can use the marshmallow bits and chocolate chips to fully cover the top of the blondie. This tends to "hold" the blondie down and limit overflow in smaller bowls, especially around the edges.)
  • If your blondie sticks to the bowl, you may try mixing the brownie in a bowl and transferring the batter to a separate bowl you've sprayed with nonstick cooking spray before going in the microwave. 
  • Top with low-calorie ice cream, fat-free whipped topping, or other toppings of your choice.

  • You can easily reduce calories and carbs by reducing the number of marshmallow bits and chocolate chips used. As you can see in the photos, the amount the recipes calls for is generous. I like my s'mores, mmkay?
