Microwavable Low Carb Bacon, Egg, and Cheese Biscuit
A low calorie, low carb bacon, egg, and cheese biscuit recipe that can be prepped entirely in a microwave.

- 3/8 C 92g Liquid Egg Whites, or 2 whole egg whites
- 2 slices Pre-Cooked Chicken Bacon or any lower fat bacon
- 2 Tbsp 14g Shredded Cheddar Cheese, fat-free optional
- 1/3 C 33g Carbquick Biscuit Mix
- 1 1/2 Tbsp Water
If you're using pre-cooked bacon like the chicken bacon, skip this step. Otherwise, microwave two slices in between two paper towels or on top of a bowl as pictured for 2 minutes or until crispy.
Once the bacon is cooked, crumble it and mix with the egg whites and cheddar cheese in a small bowl. Microwave for 75-90 seconds or until the egg whites or no longer runny.
While the eggs cook, mix the biscuit mix and water in a small bowl. Once you have a dough, split it in half to make two biscuits. Or make one giant biscuit if you'd like. Add the biscuits to a piece of parchment paper or microwave-safe plate. Microwave for 45-60 seconds. (You can add a bit of cooking spray or egg wash to the top for more of a golden brown finish.)
After the biscuits have cooled, use a knife to cut them in half and place half of the bacon, egg, and cheese mixture in between each biscuit.
