Rotisserie Chicken Salad

Pulled rotisserie chicken meets a low fat spin on classic chicken salad.

Ingredients

  • 1 Rotisserie Chicken skin removed and pulled (about 12 oz total)
  • 1 Celery Rib diced
  • 1 Scallion diced
  • 1 Jalapeño Pepper seeded and diced
  • cup (80g) Fat Free Greek Yogurt
  • cup (80g) Light Mayo
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Hot Sauce
  • 1 Tablespoon Lemon Juice
  • 3 slices Center Cut Bacon cooked and chopped
  • Salt and Pepper to taste

Instructions

  • Mix everything but the chicken together in a large bowl.
  • Add the chicken and fold everything together.
  • Serve with crackers, on croissants, or make lettuce wraps.

Notes

Other add-in ideas: Swap bacon for roasted nuts or mushrooms. Add sweetness with dried fruits like cranberries or cherries, fresh fruits like halved grapes, or a blend of both. You could also add sweetness with honey or other sweeter sauces in place of some acidity (lemon juice, hot sauce, mustard, etc.)
