Add the bacon to a nonstick skillet over medium heat. Cook until crispy, about 5-6 minutes.
While the bacon cooks, toast the bread and slice the bananas. Mix the powdered peanut butter and water together in a small bowl.
Once the bacon is crispy, transfer to a paper towel and drain all but about 1 teaspoon of bacon grease.
Reduce the heat to medium-low and carefully place the banana slices in the pan in an even layer. Cook for 1-2 minutes until the banana begins to caramelize on one side before flipping and cooking an additional 1-2 minutes. Remove the pan from the heat and set aside.
Top each slice of toast with a little more than 1 tablespoon of the peanut butter mixture, 3 ounces of cottage cheese, and 1/4th of the caramelized banana slices. Drizzle a teaspoon of honey over each slice and sprinkle the crispy bacon over the top.
Notes
If you want to skip the bacon, you can use a small amount of olive oil or avocado oil cooking spray to brown the bananas. You can also crumble precooked bacon over the top for a time saving solution.
