Wash and fully dry the potatoes before using a fork to poke holes around each potato.
Spray each potato with a bit of cooking spray or brush with the olive oil. Optional: Sprinkle salt over each potato if you intend to eat the potato skins.
Add the potatoes to the Ninja Foodi Cook & Crisp basket and air fry for 35-40 minutes at 400ºF. The potatoes will be fully baked when you can easily pierce through them with a fork or the internal temperature is around 190ºF to 200ºF.
Let the potatoes briefly cool before slicing the tops with a knife and squeezing the ends to open the potatoes. Serve with butter, black pepper, fresh herbs, and sour cream or fat free Greek yogurt, if desired.

The size of your potatoes will affect cook time and how many potatoes you can fit in the basket. If you have larger 12-ounce potatoes, you'll only be able to fit three, and they may take an extra 5-10 minutes to cook through.
