Inside Out Chocolate Chip Protein Cookies

- 1/4 C 28g Coconut Flour
- 1 scoop 31g PEScience Protein Powder, vanilla
- 3 Tbsp 15g Unsweetened Dark Cocoa Powder
- 2 1/2 Tbsp Swerve Confectioners or powdered sugar
- 1/2 tsp Baking Powder
- 1/4 tsp Kosher Salt or 1/8 tsp table salt
- 3/4 C 170g Fat Free Greek Yogurt, vanilla
- 3 Tbsp 42g White Chocolate Chips
Preheat an oven to 350F and line a baking sheet with parchment paper.
Mix the dry ingredients in a large bowl. Make sure no clumps remain from the coconut flour.
Add the Greek yogurt to the dry ingredients and stir until a dough begins to form.
Gradually add the chocolate chips in as you fold the dough. Once all the chocolate chips are added, use your hands to roll the dough into a large ball.
Divide the dough into 6 pieces and flatten them into circles between your palms. (Cooking spray on the hands helps prevent sticking.)
Bake for 14-16 minutes or until the cookies are baked through. They should still be soft but able to gently move. They'll be more firm after cooling so don't bake until they're completely firm.
