Honey Harissa Chicken Gyros

Ingredients

For the Honey Harissa Chicken

  • 1 pound Pulled Rotisserie Chicken
  • 3 Tablespoons 63g Honey
  • 3 Tablespoons 63g Harissa*
  • 2 Tablespoons 30g Lemon Juice
  • 1/2 teaspoon Garlic Powder

For Serving

  • 4 Joseph's Bakery Pita Bread or your choice of pita
  • 1/2 cup 120g Tzatziki
  • 1/2 cup 120g Reduced Fat Feta Cheese
  • 1 medium Seedless Cucumber diced
  • 2 Roma Tomatoes diced
  • Pickled Onions or Thinly Sliced Red Onion to taste

Instructions

  • Set your oven to a high broil and place a rack in the center position.
  • Mix the honey, harissa, lemon juice, and garlic powder together before tossing the chicken in the sauce. Transfer to a quarter sheet pan or large oven-safe pan.
  • Place the chicken under the broiler for 10-12 minutes, stirring halfway through. The sauce should begin to caramelize and the chicken should slightly brown and crisp around the edges.
  • To serve, spread the tzatziki on warmed pita bread** and pile on the broiled rotisserie chicken and toppings.

Notes

*If you can't find harissa, you can substitute it for chili garlic sauce, sambal oelek, or another chili paste.
**You can wrap in a damp paper towel and microwave for 15-20 seconds or warm on a skillet.
