High Protein Sloppy Joe Nachos: Sloppy NaJoes
A high protein, low calorie twist on sloppy joe nachos.

- 6 extra thin Yellow Corn Tortillas
- 1/2 tsp Sea Salt
- 1 C 280g High Protein Sloppy Joe Recipe, cooked ahead of time
- 1/4 C 28g Fat-Free Shredded Cheddar
- 1/2 C 56g Fat-Free Shredded Mozzarella
- 1-2 Jalapeno Peppers thinly sliced (optional)
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
Stack 6 tortillas on top of each other and cut into 6 triangles *the shape of an asterisk* before spacing all the triangles out evenly on the baking sheet. (Depending on the size of your baking sheet, you may have to slightly layer them. If you want extra crispy, you can add a second baking sheet and then consolidate after they come out of the oven.)
Spray the tortillas with a bit of cooking spray and sprinkle with sea salt. Optional: squeeze a bit of lime juice on top of the tortillas.
Bake for 6-8 minutes or until the tortillas are golden brown and crispy. They'll continue to crisp as they cool, don't overcook.
After the tortilla chips have cooled, spoon reheated sloppy joe mix on top of the chips, followed by the shredded cheese and sliced jalapenos.
Bake for an additional 8-10 minutes or until the cheese is fully melted. Serve warm and enjoy!
