8ozReduced Fat Cream Cheese
2ozReduced Fat Shredded Cheese
2ozShredded Cheddar
1/2C70g Frozen Fire Roasted Corn
Instructions
Preheat oven to 400ºF.
Microwave the cream cheese in 15- second intervals until you can stir it together with the cowboy caviar, about 30-60 seconds total.
Stir in the rotisserie chicken and place in an oven-safe skillet or baking dish.
Top with the lite cheese, followed by the cheddar and fire roasted corn. Bake for 15-20 minutes until the cheese is melted and bubbly. Serve with chips or fresh veggies.
Notes
For a lower fat chicken dip, you can use fat free cream cheese and less cheese on the top layer. 1 oz of each shredded cheese will work fine.
