Ingredients

  • 12 oz Pulled Rotisserie Chicken Breast or your choice of cooked chicken
  • 13 oz jar Cowboy Caviar I used Trader Joe's
  • 8 oz Reduced Fat Cream Cheese
  • 2 oz Reduced Fat Shredded Cheese
  • 2 oz Shredded Cheddar
  • 1/2 C 70g Frozen Fire Roasted Corn

Instructions

  • Preheat oven to 400ºF.
  • Microwave the cream cheese in 15- second intervals until you can stir it together with the cowboy caviar, about 30-60 seconds total.
  • Stir in the rotisserie chicken and place in an oven-safe skillet or baking dish.
  • Top with the lite cheese, followed by the cheddar and fire roasted corn. Bake for 15-20 minutes until the cheese is melted and bubbly. Serve with chips or fresh veggies.

Notes

For a lower fat chicken dip, you can use fat free cream cheese and less cheese on the top layer. 1 oz of each shredded cheese will work fine.
