Mix the flour, baking powder, and salt together before adding the Greek yogurt. Use a fork to stir everything together until a crumbly dough begins to form. Some dry flour should remain in the bowl.
Transfer the crumbly dough onto a flat surface and work the dough into one smooth ball of dough. Portion the dough into six 45-gram pieces. Roll the pieces of dough between your palms or on the flat surface to form thin strips, about 8" long.
Fold one end of each strip over to form a ribbon shape and transfer to an air fryer basket sprayed with cooking spray. Once all six bread twists are in the basket, spray the top with cooking spray and close the lid.
Air fry at 350ºF for 15 minutes. (Or bake at 375ºF for 25-30 minutes directly on a baking sheet.)
Towards the end of cooking, microwave the light butter and mix in the granulated sugar and cinnamon. Brush the cinnamon sugar butter on top of the bread twists as soon as they come out of the air fryer. Serve warm.
