Chili Garlic Ground Turkey and Green Beans

Ingredients

  • 1 pound Ground Turkey
  • 1 pound Green Beans roughly chopped
  • 6 oz bag Baby Spinach roughly chopped
  • 1 Tablespoon Olive Oil divided

For the Sauce

  • 1/4 cup 64g Tomato Paste
  • 2 Tablespoons 42g Honey
  • 2 Tablespoons 30g Chili Garlic Sauce
  • 2 Tablespoons 30g Soy Sauce
  • 2 Tablespoons 30g Rice Vinegar
  • 1/3 cup Water
  • 4 Green Onions thinly sliced (using only the white part and reserving the green for garnish)

Instructions

  • Heat a large skillet over medium-high heat with 1/2 tablespoon of olive oil. Add the green beans to the pan and cook for 2 minutes untouched before tossing in the pan. Cook for another 3-4 minutes until bright green and blistered in spots. Transfer to a bowl and set aside.
  • Heat the remaining 1/2 tablespoon of olive oil in the skillet before adding the ground turkey. Cook the turkey for 3-4 minutes without breaking apart until one side is golden brown. Use a spatula to break the turkey apart into crumbles and fully cook. 
  • Add the sauce to the cooked ground turkey. Cook for 2-3 minutes until the sauce begins to thicken. 
  • Add the chopped spinach and green beans. Cook for another 1-2 minutes, stirring everything together, until the spinach wilts and everything is coated in the sauce. 
  • Remove from the heat and serve over rice.
