Ingredients
1poundGround Turkey
1poundGreen Beansroughly chopped
6ozbag Baby Spinachroughly chopped
1TablespoonOlive Oildivided
For the Sauce
1/4cup64g Tomato Paste
2Tablespoons42g Honey
2Tablespoons30g Chili Garlic Sauce
2Tablespoons30g Soy Sauce
2Tablespoons30g Rice Vinegar
1/3cupWater
4Green Onionsthinly sliced (using only the white part and reserving the green for garnish)
Instructions
Heat a large skillet over medium-high heat with 1/2 tablespoon of olive oil. Add the green beans to the pan and cook for 2 minutes untouched before tossing in the pan. Cook for another 3-4 minutes until bright green and blistered in spots. Transfer to a bowl and set aside.
Heat the remaining 1/2 tablespoon of olive oil in the skillet before adding the ground turkey. Cook the turkey for 3-4 minutes without breaking apart until one side is golden brown. Use a spatula to break the turkey apart into crumbles and fully cook.
Add the sauce to the cooked ground turkey. Cook for 2-3 minutes until the sauce begins to thicken.
Add the chopped spinach and green beans. Cook for another 1-2 minutes, stirring everything together, until the spinach wilts and everything is coated in the sauce.
Remove from the heat and serve over rice.
