BBQ Chicken Stuffed Air Fryer Sweet Potatoes

How to make baked sweet potatoes in an air fryer and stuff them with pulled BBQ chicken and cheese.

Ingredients

  • 3 Sweet Potatoes
  • about 8 oz each
  • Cooking Spray or Oil
  • 9 oz Pulled BBQ Chicken*
  • 2 oz Shredded Cheese like mozzarella, smoked gouda, or cheddar
  • 1/4 Red Onion diced
  • 1 handful Parsley chopped

Instructions

  • Wash and dry the sweet potatoes before using a fork to poke holes all around the potatoes. Spray each potato with cooking spray or brush with oil and place in an air fryer basket. If you intend to eat the potato skins, sprinkle salt over the potatoes.
  • Air fry the potatoes for 30-35 minutes at 400ºF until cooked through (soft and tender or 190-200ºF using a food thermometer). If the potatoes get too dark, you can place a sheet of aluminum foil on top.
  • Once cooked, slice the potatoes down the center and squeeze the ends to create an opening. Fill each potato with 3 ounces of chicken, a pinch of cheese, and top with red onion and parsley. Air fry an additional 3-5 minutes at 350ºF to melt the cheese.

Notes

*The nutrition facts are with my Instant Pot BBQ Chicken Thighs, but you can use rotisserie chicken tossed in BBQ sauce or another BBQ chicken recipe.
For Oven Baked Sweet Potatoes, bake the sweet potatoes on a foil lined baking sheet at 425ºF for 40-50 minutes.
