Banana Bread Protein French Toast

A great way to repurpose leftover protein banana bread or your favorite high protein bread for breakfast or brunch.

Ingredients

  • 6 slices Protein Banana Bread or your choice of high protein bread
  • 2 large Eggs
  • 1/3 cup 80g Milk
  • 1 teaspoon 4g Granulated Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1/2 teaspoon Ground Cinnamon
  • Pinch of Kosher Salt

Instructions

  • Whisk together the eggs, milk, vanilla extract, cinnamon, sugar, and salt. Set aside.
  • Heat a large skillet or griddle over medium-low heat.
  • Once hot, add cooking spray. Dip the sliced protein bread in the egg mixture and place in the skillet.
  • Cook for about 2 minutes or until golden brown before flipping and cooking an additional 2 minutes. For a larger batch, you can keep finished slices in an oven set to a low heat (~200ºF).
  • Serve with a dusting of powdered sugar, fresh banana slices, peanut butter, and syrup.

Notes

The protein banana bread I used has 150 calories, 10g protein, 14g carbs, and 6g fat per slice.
Nutrition facts are for the protein French toast slices only, no toppings.
I used 2% Fairlife milk, but almond milk or any milk should work fine.
