Preheat oven to 400F and spray a baking sheet with nonstick spray. Set aside.
Cut the bacon into small pieces and cook in a pan over medium-high heat.
Wash, peel, and chop the sweet potato into small pieces while the bacon cooks. Add the chopped potato to a food processor and pulse 10-15 times until no large chunks remain. (Depending on the size of your food processor, you may need to empty the smaller pieces and add the large pieces back to avoid pulverizing the smaller pieces.)
Whisk the eggs together in a large bowl with the spices.
Drain the cooked bacon over a paper towel and add the sweet potatoes, bacon, and shredded cheeses. Stir well.
Use a tablespoon or small ice cream scoop to create the tots. Pack each scoop completely full and wipe away the edges before transferring to the baking sheet. The recipe makes about 28 tots using a tablespoon.
Bake the tots for 17-20 minutes or until they begin to brown slightly on the bottom and are crispy. Mix the honey dip ingredients together and serve warm.
