Air Fryer Butternut Squash

Ingredients

  • 1 pound Diced Butternut Squash
  • 1 Tablespoon Olive Oil
  • Your Choice of Seasoning from the notes section below

Instructions

  • To prepare fresh butternut squash, peel the squash and slice it in half vertically. Use a spoon or melon baller to scoop out any seeds and fibers before dicing. A large squash yields ~ 2 pounds. You can make a double batch or refrigerate 1/2 for later.
  • Toss the butternut squash in the olive oil before adding the seasoning and stirring to evenly coat.
  • Air fry for 15-20 minutes at 400ºF, shaking halfway through for even cooking.

  • reduce olive oil to 1/2 tablespoon
  • 1 tablespoon maple syrup
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried rosemary
  • Smoked Paprika

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • Chili Garlic

  • swap 1/2 the olive oil for chili oil
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon kosher salt
