Grated Parmesan and Fresh Lemon Wedgesfor serving (optional)
Instructions
Toss the quartered potatoes in 1 tablespoon (16g) olive oil and a pinch of kosher salt and black pepper. Air fry at 400ºF for 15-20 minutes or until fork tender. Shake halfway through for even cooking.
While the potatoes cook, toss the asparagus and rosemary in the remaining olive oil and season with the garlic powder, black pepper, and red pepper flakes.
Add the air fried potatoes to the mixing bowl with the asparagus and toss everything together.
Add everything back to the air fryer basket and air fry at 400ºF for 6-8 minutes or until the asparagus is bright green and tender crisp. Salt to taste.
Top with freshly grated parmesan and serve right away with lemon wedges.

For Oven Roasted Asparagus and Potatoes
Roast the potatoes on a half sheet pan at 450ºF for 20-25 minutes before mixing with the asparagus and going back on the sheet pan for another 10 minutes or so. Season everything the same.
