Air Fryer Asparagus and Potatoes

Crispy on the outside, light and fluffy on the inside potatoes with tender crisp garlic rosemary asparagus.

Ingredients

  • 1 1/2 lb Baby Gold Potatoes quartered
  • 8 oz Asparagus trimmed and cut into thirds
  • 2 Tbsp 32g Olive Oil, divided
  • 2 Tbsp 10g Rosemary Leaves, roughly chopped
  • 2 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1/4 to 1/2 tsp Red Pepper Flakes
  • Pinch of Kosher Salt
  • Grated Parmesan and Fresh Lemon Wedges for serving (optional)

Instructions

  • Toss the quartered potatoes in 1 tablespoon (16g) olive oil and a pinch of kosher salt and black pepper. Air fry at 400ºF for 15-20 minutes or until fork tender. Shake halfway through for even cooking.
  • While the potatoes cook, toss the asparagus and rosemary in the remaining olive oil and season with the garlic powder, black pepper, and red pepper flakes.
  • Add the air fried potatoes to the mixing bowl with the asparagus and toss everything together.
  • Add everything back to the air fryer basket and air fry at 400ºF for 6-8 minutes or until the asparagus is bright green and tender crisp. Salt to taste.
  • Top with freshly grated parmesan and serve right away with lemon wedges.

Notes

For Oven Roasted Asparagus and Potatoes

Roast the potatoes on a half sheet pan at 450ºF for 20-25 minutes before mixing with the asparagus and going back on the sheet pan for another 10 minutes or so. Season everything the same.
