A super simple recipe for high protein Christmas cookies that will blow you away.

Ingredients
3small (270g)Bananasmashed
3/4C (90g)Sweetened Coconut Flakes
2 2/3scoops (80g)Protein Powdervanilla
Frosting
1scoopProtein Powdervanilla
1tspStevia or 0-Calorie Sweeteneroptional
1-2tspAlmond, Cashew, or Low-Cal Milk add slowly to desired consistency
1tiny dropPeppermint Extractoptional
Instructions
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Peel bananas and mash with a fork or spoon before adding coconut flakes and protein. Mix until smooth.
Spoon (roughly 2 Tbsp) mixture onto baking sheet in 12 small circles. Leave enough space between for some expansion during bake time. If you need to use two baking sheets to spread them out, that's fine.
Bake for 7-8 minutes or until the tops are no longer mushy or moist. Remove from oven and allow cookies to cool briefly before adding frosting.
While the cookies are in the oven, mix protein powder, stevia, and a low-cal liquid of your choice (water works as well) in a small bowl. If you'd like to have a peppermint flavored cookie, add a tiny drop of peppermint extract. (Be careful with this as a little goes a long way and once you're too minty, it's too late.)
Add frosting and sprinkles if you'd like and enjoy!
