High Protein Crispy Carnitas Breakfast Bake: Healthy Breakfasts in Bulk

Breakfast bakes are a great way to prepare a healthy, high protein breakfast in bulk. They’re as easy as adding your ingredients to a baking sheet or dish and popping it in the oven. Yet, I don’t see that many breakfast bake recipes floating around. After finishing my crispy carnitas recipe, this was the first thing I made. I’ve made breakfast bakes with bacon, sausage, chicken, and even barbecue pork tenderloin. So a spicy spin with the crispy carnitas was a natural progression. It didn’t disappoint!
Crispy Carnitas Breakfast Bake Ingredients
As usual, I’m bringing a bare bones recipe that you can fancy up as you see fit. One thing you’ll obviously need for the true crispy carnitas part is the crispy carnitas recipe, which you can find here. I mention in the recipe that you could swap the carnitas for another meat if you don’t have the ingredients on hand or have something else prepped already.
For the hash browns, the recipe calls for frozen shredded potatoes. You can use freshly grated potatoes, sweet potatoes, or a lower carb option like zucchini or butternut squash. I have a picky eater in the house, so I didn’t add onions, peppers, or other veggies, but I’d highly recommend it. Go crazy.
If you’re using full-fat cheese, you may want to pull back on the amount used to save a few calories and grams of fat. You could also swap whole eggs for egg whites if you’d like to reduce calories and fat even further. Conversely, if you’d like to add a bit more fat, you could squeeze a few extra eggs into the recipe.
Other than that, the spices and seasoning of your breakfast bake are entirely up to you. I sprinkled a bit of cayenne pepper, paprika, salt, and pepper on mine.
Crispy Carnitas Breakfast Bake
A high protein breakfast bake that's perfect for making healthy breakfasts in bulk.
- 2 C (340g) Shredded Hash Browns frozen
- 1/3 recipe (6oz) Crispy Carnitas or 6 ounces of your choice of meat
- 4 large Eggs
- 3/4 C (84g) Fat-Free Shredded Cheddar Cheese
- 1/8 tsp Salt & Pepper
- 1/8 tsp Cayenne Pepper
- 1/8 tsp Paprika
Preheat oven to 450 degrees F and line a baking sheet with parchment paper. (I used both a baking sheet and cast iron skillet and like the baking sheet better.)
While oven preheats, add frozen hash browns to a large bowl or Ziploc bag and spray with cooking spray. Add spices and stir or shake.
Add hash browns to baking sheet in a thin layer and bake for 10 minutes before flipping and baking for an additional 10 minutes.
After 20 minutes remove hash browns and add 4 eggs, cheese, and crispy carnitas. Bake for an addition 6-8 minutes until eggs reach your desired level of doneness. (8 minutes should solidify the yolk but cook times may vary.)
Cut into 4 quarters and enjoy!
