How to Make the Germanchökolätekäke Protein Pancakes

The protein pancakes themselves are super simple. Beyond the Syntha-6 protein powder, you’ll only need a handful of ingredients:

  • Coconut Flour
  • Baking Powder
  • Sweetened Coconut Flakes
  • Eggs
  • Unsweetened Apple Sauce

If you’re wondering about swapping the coconut flour for something like all purpose flour, I typically recommend at least a 2:1 swap. In this case, that would be about 3/8 C (45g) all purpose flour instead of coconut flour. Though you may need a bit more to ensure your pancake batter isn’t too runny. Since this will add more carbs and calories, I recommend rolling with the coconut flour if possible.

The apple sauce used in the protein pancakes is a butter replacement.  Since you’ll be using light butter for the frosting, you could always swap a little butter for apple sauce for an even fluffier protein pancake. Swapping 1/4 C (60g) apple sauce for light butter would only add around 30 calories per pancake.

Coconut Butter Pecan Frosting

If you’ve ever made a German chocolate cake, you know the typical frosting is a pain to make. That’s definitely not the case here. If you’re a fast mixer, your protein pancakes frosting will be ready to go in about a minute. Here’s everything you’ll need:

  • Light Butter
  • Sugar Free Pancake Syrup
  • Swerve Confectioners or Any Sugar Substitute
  • Sweetened Coconut Flakes
  • Chopped Pecans

Since this “frosting” is really more of a spread, the Swerve isn’t absolutely necessary. It does give the frosting a bit more body than a granular sweetener, but it won’t make or break the recipe by any means if you wanted to use something like Stevia.

I’ll also add that you could pass on the frosting altogether and just use a little butter and syrup on the protein pancakes.

Protein Pancakes

Coconut Butter Pecan Frosting

  • 2 Tbsp (28g) Light Butter room temp or softened (microwave for 5 seconds)
  • 1 Tbsp (15g) Sugar Free Pancake Syrup I used Walden Farms Pancake Syrup
  • 1 Tbsp (9g) Swerve Confectioners or any powdered sugar substitute (granular sugar substitutes work as well)
  • 2 Tbsp (15g) Sweetened Coconut Flakes
  • 1/2 oz (14g) Chopped Pecans


  1. Mix the protein powder, coconut flour, baking powder, and coconut flakes in a large bowl. Stir until smooth.

  2. Heat a large skillet or griddle over medium-high heat with nonstick cooking spray. 

  3. Once the pan is hot, use a 1/4 C measuring cup to pour the batter into 3 circles. (The recipe makes 6 pancakes with this measurement. Adjust accordingly for smaller/larger pancakes.) 

  4. Cook for 2-3 minutes or until bubbles begin to form on the top. Use a spatula to flip the pancakes once the bottom side is cooked. (Time may vary depending on pancake size and pan heat.) 

  5. Cook for an additional 1-2 minutes or until the pancakes are cooked through. Transfer cooked pancakes to a plate to cool. Repeat until you've used all the protein pancakes batter.

  6. For the pancakes frosting, mix the butter, syrup, and Swerve or sugar substitute in a small bowl. Stir until smooth before adding the coconut flakes and chopped pecans. 

  7. If you're serving the protein pancakes right away, divide the frosting between the six pancakes. If you're going to save some of the pancakes for later, I recommend refrigerating the pancakes and frosting separately to avoid soggy pancakes.
